
The first tea session of 2026 begins with a journey to Hong Kong.
Last month, I spent time visiting old tea shops across the city, where tea has been roasted, traded, and appreciated for generations.
While Hong Kong is often associated with pu er by the wider tea world, roasted teas remain part of everyday life for many locals. Many of the city’s traditional tea shops are run by descendants of tea merchants from Fujian and Chaozhou who settled in Hong Kong more than a century ago.
This tea experience explores four Fujian Tie Guan Yin (Iron Goddess) teas from 2025, roasted by two Hong Kong tea makers in two distinct styles: light fragrant roast and deep traditional roast. A study of how the same tea leaves can reveal entirely different characters through the roasting process.
